WHITE HOUSE COWBOY COOKIES | |
3 c. flour 1 tbsp. baking powder 1 tbsp. baking soda 1 tbsp. cinnamon 1 tsp. salt 3 sticks butter 1 1/2 c. packed light brown sugar 1 1/2 c. sugar 3 eggs 1 tbsp. vanilla 3 c. semi-sweet chocolate chips 3 c. rolled oats (quick or old-fashioned) 2 c. sweetened flake coconut 2 c. finely chopped pecans Heat oven to 350°F. Mix flour, baking soda, baking powder, cinnamon and salt in a bowl. In another large bowl, beat butter until smooth and creamy. Gradually beat in sugars and combine well. Add eggs, 1 at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop 1/4 cup of dough onto ungreased baking sheets, spacing 3-inches apart. Bake 15 to 20 minutes, rotating sheet halfway through. Remove cookies to rack to cool. |
