CHOP SUEY WITH GLUTEN 
3 tbsp. oil
1 c. coarsely chopped onion
1 1/2 c. coarsely chopped celery
1 c. sliced mushrooms
1 c. gluten, cut into strips
1/4 tsp. paprika
1-2 tsp. salt
2 c. hot water
2 c. bean sprouts
1/2 c. carrots, sliced thinly
1/2 c. bamboo shoots, sliced thinly
1/2 c. cauliflower, sliced thinly
2 tbsp. cornstarch
1/2 c. water
2-3 tsp. shoyu
6 c. Chinese fried noodles
1/4 c. toasted cashews or peanuts
2 tbsp. parsley, chopped

Saute onion, celery, mushrooms and gluten in oil. Add next 7 ingredients and simmer for about 15 minutes.

Mix cornstarch with 1/2 cup water, add shoyu, and stir into hot mixture to thicken; simmer for 10 minutes.
