CHOP SUEY 
1/4 c. butter
1 1/2 c. diced chicken
1 c. onion, diced fine
1 tsp. salt
1/8 tsp. pepper
1 c. celery, cut fine
1 c. hot water or chicken broth
1 c. Chinese mix vegetables, drained

THICKENING:

1/3 c. cold water or broth
2 tbsp. cornstarch
2 tsp. soy sauce
1 tsp. sugar

Melt butter in hot skillet. Add meat, stir and sear quickly. Add onions and fry for 5 minutes. Add celery, salt, pepper and hot broth. Cover and cook for 5 minutes. Add drained vegetables. Mix thoroughly and heat to boiling point. Add thickening ingredients. Stir lightly and cook for 5 minutes. Serve hot over rice or Chinese noodles.
