$20 PINEAPPLE - CARROT CAKE | |
3 c. sifted all-purpose flour 2 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 4 eggs 1 1/2 c. oil 1 c. crushed pineapple, include a little of the juice 2 c. grated carrots 2 tsp. vanilla 1 c. chopped pecans Combine sugar and oil; add vanilla. Add eggs, one at a time, beating after each addition. Add dry ingredients alternately with pineapple and nuts. Lastly, add grated carrots. Don't overbeat. Pour into 3 (9 inch) greased pans and bake at 350 degrees for 25 to 30 minutes. Cool slightly and frost. FROSTING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 box confectioners' sugar 2 tsp. vanilla 1 c. chopped nuts Combine ingredients and beat until smooth. |
