ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. brown sugar
2 c. grated raw, unpeeled zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. nuts (optional)
2 tsp. cinnamon

Beat eggs, add oil and sugar and zucchini. Mix well. Combine dry ingredients and stir in thoroughly. Then stir in vanilla and nuts. Pour into 2 greased and floured loaf pans, 9 x 5 x 3 inches. Bake at 350 degrees for 1 hour.
