SWEET POTATO AND PINEAPPLE 
6 big sweet potatoes
1 lg. shredded pineapple

Cook the sweet potatoes until tender; peel, then mash, season with a nice size lump of butter and sugar to taste. Drain off juice of pineapple; add the pineapple to sweet potatoes. Put the mixture of pineapple and sweet potatoes into baking dish.

Take the juice of pineapple and put it into a boiler on the stove, add a spoon of butter; when hot, pour a spoon of flour that has been slightly thinned with water into the juice and stir until thick.

Take from fire; pour this sauce over potatoes and run in oven long enough to brown. Serves 8 to 10.
