3 c. diced squash
1 diced onion
1 carrot, sliced
1 lb. ground beef
1 can cream of mushroom soup
1 carton sour cream
1 tbsp. butter
1 box beef flavor Stove Top stuffing
1 c. grated cheese

Cook squash, onion and carrot until tender; set aside.

Brown and drain the ground beef. Add soup, sour cream and butter. Add drained vegetables to meat. Prepare stuffing as box directs and line 9"x9" baking pan with stuffing. Pour in beef and veggie mixture and top with cheese. Bake at 350 degrees for 30 minutes.
