CREPE SUZETTES 
2 eggs
1 1/2 c. milk
2 tbsp. sugar
1/2 tsp. salt (scant)
1 c. flour
Pinch of baking powder
1/4 c. melted butter

Grease electric skillet; preheat to 380 degrees. Pour approximately 1/4 cup of batter in center of skillet, then take electric skillet by handles and turn so that batter spreads out and is very thin. (You should have one large crepe covering skillet.) Cook on both sides; turn when crepe starts to bubble. Great to stuff with strawberries and whipped cream for desserts or stuff with chicken, cheese, onion mixture topped with white sauce and Cheddar cheese. A favorite at our house is with butter and syrup, just like a pancake.
