GRAMPA Z'S CHILI | |
1 1/2 lbs. ground round 1 (#2) can dark red kidney beans 1 lg. onion, diced 1/2 green pepper, diced 1 1/2 tsp. salt 1/4 tsp. pepper 1 - 1 1/2 tbsp. chili powder 2 slices bacon, pieced 1 sm. can tomato puree or paste 1 (#2) can tomatoes 1/2 tsp. ground cumin Dash paprika (opt.) 2 c. water Fry bacon in electric skillet; add onions and saute. Add ground beef and cook until brown. Keep turning and breaking up ground beef (so it will not be lumpy). In a 4 quart pan combine kidney beans, green pepper, salt, pepper, chili powder, tomato puree, tomatoes, ground cumin, paprika, water and add cooked skillet ingredients and simmer for 2 hours. Add water as needed. Serve as is or over spaghetti, optional to add chopped onion and/or grated Parmesan cheese (grated sharp cheese, optional). |
