PUMPKIN CANDY | |
1 lg. pumpkin 2 tbsp. mason lime 2 lbs. sugar Cut large pumpkin into 3 x 1/2 inch pieces and peel them. Fill a large container with water about 3/4 full. Add 2 tablespoons of mason lime. Place the pumpkin pieces in the mason lime water overnight. Next day, take them out and wash the pieces real well. Boil the pumpkin pieces in a 3-quart pan of plain water for 15 to 20 minutes. Remove the pieces and drain well. Pierce each piece on all sides with toothpicks. With the remaining water used for cooking, add 2 pounds sugar and the pumpkin pieces; let it boil slowly for 1 hour, stirring occasionally. Dip a wooden spoon in the syrup and lift a little of the syrup and if it forms a thread and does not break, it's done; but if it breaks, let it cook for 15 minutes longer. Remove the pieces with a slotted spoon and place them on waxed paper. Let the pieces cool. |
