POTATO YEAST BISCUITS 
3 c. mashed potatoes
2 tbsp. sugar
2 eggs
Flour
1 c. oil
1 tsp. salt
1 pkg. dry yeast

Boil potatoes. While hot, mash them and add sugar, oil and salt. When lukewarm, add yeast. Mix well and sit in warm place 3-4 hours. When light, add beaten eggs and knead in flour until mixture leaves side of bowl. Shape into biscuits. Let rise until light. Bake in 350 degree oven.
