DIXIE CHICKEN SALAD 
2 c. cooked chicken, white meat, diced in 1/2 inch cubes
2 c. cooked sweet potatoes, diced in 1/2 inch cubes
2 (4 oz.) cans Mandarin orange, drained
2 c. diced celery, cut in 1/2 inch slices
1 tbsp. lemon juice
3/4 c. mayonnaise
Lettuce leaves

Mix the chicken, potatoes, Mandarin oranges, celery, lemon juice and mayonnaise well. Place in the refrigerator for 2 hours to chill through. Serve on lettuce leaves. Serves 6.
