ANJOU QUICK BREAD 
2 ripened Anjou pears
2 c. buttermilk baking mix
1/2 c. sugar
1/2 tsp. baking soda
4 egg whites, lightly beaten
1/2 c. non-fat or lowfat plain yogurt
1/2 c. chopped walnuts

Core and puree pears. Mix together baking mix, sugar and soda. Combine beaten egg whites, yogurt and pear puree. Mix together with dry ingredients. Pour batter into lightly oiled 9 x 5 x 3 inch loaf pan. Bake 50 minutes at 350 degrees. Makes 1 loaf.
