STUFFED SANDWICH 
4 eggs
1/2 c. butter
1 c. flour
3/4 c. shredded Mozzarella cheese
1 tsp. poppy seeds
1 c. water
1/2 lb. cubed turkey
2 ribs celery, cut up
1/3 c. low calorie mayonnaise
2 tbsp. red wine vinegar
1/2 tsp. pepper
Lettuce, tomato, olives

Boil water and butter; add flour and beat until ball forms, 10 seconds. Remove from heat and add eggs, one at a time, then cheese. Spread out on cookie sheet and sprinkle half with poppy seeds. Bake at 450 degrees for 20 minutes; 350 degrees for 15 minutes.

Cool, cut in half and spread with chicken salad, sliced tomato, shredded lettuce, and sliced olives. Serve.
