STRUFFOLI (HONEY BALLS) | |
3 1/2 c. sifted all purpose flour (approximately) 6 eggs 1 tsp. salt 1 (3 oz.) bottle confetti sprinkles 1 lb. bottle honey 6 tbsp. sugar Fat for frying (vegetable oil) Mix flour, eggs, and salt together with a wooden spoon, then with hands, until dough cleans bowl. Add more flour if needed. Knead on lightly floured board until dough is smooth and does not stick to fingers. Cut dough into small pieces. Roll into long ropes approximately 1/4 inch wide. Cut into 1/8 inch or 1/4 inch pieces. Fry a handful at a time in deep hot fat until golden brown. Drain on paper towels. Meanwhile heat honey and sugar in a large saucepan until mixture is warm. Place the drained honey balls in this mixture until all are coated with honey. Remove and place in foil muffin cups. Sprinkle candy confetti sprinkles over each muffin cup. Let cool and serve. Makes 36 cups. |
