SPINACH SOUFFLE 
2 (10 oz.) pkgs. frozen spinach, thaw and drain
3 eggs
2 c. cottage cheese
1/2 c. cheddar cheese
1/3 c. flour
1/4 c. butter
1/2 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. pepper

Mix all ingredients in blender except spinach. Pour into 2-quart casserole. Stir in spinach. Place in pan of hot water. Bake 1 hour at 350 degrees.
