FRUIT CAKE 
2 c. self-rising flour
1 lb. candied pineapple
1 lb. candied cherries
1 lb. dates, chopped
8 c. coarsely chopped pecans
4 eggs
1 c. sugar

Coat fruit and nuts well with flour. Beat eggs then add sugar to eggs, mix well. Add this mixture to fruits and nuts, mix well, pack into loaf pans. (Batter will be very thick as it is mostly fruits and nuts). Bake at 300 degrees for 1 hour or until brown. Makes three 1 pound cakes.
