PEAS A LA FRANCAISE 
4 c. fresh green peas
1/2 c. water
1 tbsp. sugar
1 tsp. salt
1/2 tsp. ground white pepper
1 head Boston lettuce, shredded
2 1/2 c. pearl onions
3 tbsp. chopped fresh parsley
2 tbsp. sweet butter, softened
2 tbsp. all-purpose flour

Combine peas, water, sugar, salt, pepper, lettuce, onions, and parsley; simmer, tightly covered, for 10 minutes. Blend butter and flour; drop by bits into peas, stirring gently until sauce thickens.
