BLACK BEAN SOUP 
1 lb. dried black beans
2 qts. water
2 tbsp. olive oil
6 cloves garlic, diced
2 onions, diced
6 sweet chili peppers, seeded & chopped
1/4 tsp. pepper
1/4 tsp. dried oregano
1/4 tsp. ground cumin
2 bay leaves
1 1/2 tsp. vinegar
1 tbsp. frozen apple juice concentrate

Wash beans, soak overnight. Drain, rinse and drain. Place in large pot with 2 quarts water, boil, reduce heat, cover and cook 45 minutes.

Saute garlic, onions and chili peppers in oil for 10 minutes, stirring occasionally. Add to skillet 1 drained cup of cooked beans and mash all together. Pour mixture into cooked beans and pot. Add pepper, oregano, cumin and bay leaves. Mix, cover and cook 1 hour. Add vinegar and apple juice. Makes 8 servings.
