PORK CHOP SUEY FOR 100 | |
20 lbs. boneless fresh pork 2 gallons bean sprout liquid and water 3 c. cornstarch 2 c. cold water 6 1/2 lbs. celery 3 lbs. onions 1/4 c. salt 1 1/2 tsp. pepper 1 c. sugar 4 lbs. canned bean sprouts or 4 lbs. shredded cabbage 3 c. soy sauce Chow mein noodles or rice Cut pork in 2-inch strips. Brown pork; add liquid and simmer 40 minutes until pork is tender. Blend cornstarch with water and stir into mixture. Add celery, onions, salt and pepper and sugar. Simmer 20 minutes, stirring frequently. Add bean sprouts or cabbage and soy sauce. Simmer 10 minutes longer. Serve over Chinese noodles or rice. |
