FRESH SPINACH SALAD | |
1 garlic clove, halved 2 tbsp. cider or red wine vinegar 1 tsp. sugar 1/2 tsp. salt 1 tsp. dry mustard 1/4 tsp. pepper 6 tbsp. olive oil 8-10 c. crisp young spinach leaves 2-3 green onions, chopped fine 1 c. "T" shapes fresh mushrooms 3 hard cooked eggs, chopped 2 slices bacon, grilled, crumbled and well blotted 1. Put the first 7 ingredients into the blender. Blend until smooth. Refrigerate. 2. Prepare remaining ingredients. Wash spinach and tear into bite size pieces. Combine spinach, onions and mushrooms. 3. Just before serving, add enough dressing to moisten. 5. Sprinkle with chopped egg and bacon. Makes a very large salad. |
