FRESH SPINACH SALAD 
1 lb. fresh spinach, washed & torn into sm. pieces
2 hard-boiled eggs, sliced & placed over spinach
10 fresh mushrooms, sliced & arranged on salad
Several slices thinly sliced onion

DRESSING:

16 oz. Cottage cheese
1 c. rice vinegar
1/4 c. sesame oil (very important)
1/4 c. brown sugar
1 tbsp. salt
3 tbsp. poppy seed
1/4 c. onion juice

Mix thoroughly and refrigerate. Makes 2 pints.
