SOUR CREAM PECAN COFFEE CAKE | |
3/4 c. brown sugar 1 tbsp. flour 1 tsp. ground cinnamon 1/2 tsp. baking soda 1 tsp. baking powder 4 tbsp. unsalted butter 1/4 c. maple syrup 1/4 c. milk 1 c. chopped nuts 1 1/2 c. flour 1/2 tsp. salt 2 eggs 1 tsp. vanilla 2/3 c. sour cream 1. Combine sugar, flour, and cinnamon in a large bowl. Cut butter into small pieces. Cut into sugar mixture. Stir in chopped nuts with a fork. Cover and refrigerate until ready to use. 2. Sift flour, salt, baking soda, and baking powder. 3. Beat eggs in large bowl until light colored and slightly thickened. Add vanilla, maple syrup, sour cream, and milk, beating until well blended. 4. Gently stir flour mixture into egg mixture just until mixed. Stir in 1 cup of the reserved topping. Pour batter into a greased 8 x 8 x 2 pan. Sprinkle with remaining topping. 5. Bake in 350 degree oven for 30 minutes or until center springs back when lightly pressed with fingertip. Cool slightly on wire rack. Serve warm from the pan. |
