HOMEMADE MANICOTTA 
4 eggs
1 c. flour
1 c. water
Salt to taste
1 qt. Italian sauce
1 tbsp. oil (for pan)

FILLING:

1 lb. Ricotta cheese
8 oz. grated Mozzarella cheese
2 eggs
1 tsp. parsley
Salt and pepper
Grated cheese (for topping)

CREPES: Mix ingredients, eggs, flour, water and salt (batter consistency is thin). Pour 2 tablespoons of batter into 6 inch skillet. Cook until edges turn white. Remove.

FILLING: Mix ingredients well. Place 1 tablespoon of filling into each crepe and fold. Place in baking dish. Pour sauce and grated cheese over manicotta. Bake at 350 degrees for 30 minutes. Serves 6.
