TRISH'S BEST EVER BANANA CAKE 
2 cups all-purpose flour
1 2/3 cup sugar
1 1/4 tsp. baking flour
1 1/4 tsp. baking soda
1 tsp. salt
2/3 cup shortening
2/3 cup buttermilk
3 eggs
3-4 medium bananas, mashed
2/3 cup chopped nuts (optional)

Preheat oven to 350°F.

Mix dry ingredients, add shortening, buttermilk and eggs and mix well. Add bananas and nuts (if using). Pour into 9x13-inch greased baking pan.

Bake at 350°F for 40 to 45 minutes or until a toothpick inserted into middle comes out clean. Frost with frosting below.

FROSTING:

1/2 cup (1 stick) butter
1/2 cup shortening
3/4 cup sugar
2 tsp. vanilla
5 tbsp. all-purpose flour
1/2 cup milk

Cream butter, shortening and sugar. Add flour and vanilla. Add milk in 1/8 cup increments and mix well after each addition. Adding all the milk at once will make the frosting too thin.

Refrigerate cake after frosting.
