SKILLET SPINACH 
10 oz. fresh spinach, washed and cleaned
1/2 tsp. minced garlic
1/4 tsp. white pepper
1 lb. box mushrooms, cleaned and sliced
1/2 c. raisins
1/8 tsp. salt
1/4 c. pine nuts

Spray skillet with 2 to 4 squirts of olive oil spray. Heat minced garlic, raisins, pine nuts and fresh mushrooms for approximately 3 to 5 minutes until mushrooms release their moisture. Add spinach and continue heating on medium until spinach is wilted, stirring all the while to prevent sticking. Sprinkle with salt and pepper. Serve immediately.
