ICE BOX COOKIES | |
1 c. brown sugar 4 c. sifted flour 1 c. white sugar 2 tsp. baking soda 1 tbsp. cinnamon 1 1/2 c. melted shortening 1 c. chopped nuts 3 eggs 1 lg. pkg. chocolate chips, melted (Melt chips over a pan of water. Cool slightly.) Melt shortening over low heat. Let cool. Mix sugars and eggs until smooth. Add shortening slowly and mix well. Divide dough in half....half with nuts and other half with chocolate. Roll between waxed paper as you would pie crust. Spread chocolate on dough and roll as a jelly roll. Shape and freeze at least one hour. These keep well and can be baked at a later date. Bake at 350 degrees for 12 minutes or until light brown. If this cookie sticks to the cookie sheet, return it to the oven for a minute. This softens the bottoms of cookies making them easier to remove. |
