CREME DE MENTHE COOKIES 
3/4 c. butter, softened
1/2 c. sugar
1 egg, beaten
3 to 4 tbsp. creme de menthe
2 c. all-purpose flour
1/2 tsp. salt
2 c. powdered sugar, sifted
1 (6 oz.) pkg. semi-sweet morsels

Cream butter and add sugar gradually. Add beaten egg and mix until well blended. Add flour and salt. Chill dough 30 minutes. Remove 1/2 of dough from refrigerator and roll out 1/8 inch on waxed paper; cut with desired cookie cutter. Remove other 1/2 of dough from refrigerator; roll and cut as above. Bake at 325 degrees for 7 to 8 minutes (do not brown). Combine powdered sugar and creme de menthe; beat until smooth. Spread mixture on 1/2 of cookies. Cover cookies with creme de menthe mixture with the other 1/2 of the cookies to form a sandwich. Frost tops with melted chocolate morsels.
