CRISPY BAKED FILLETS 
1 lb. fish fillets
1/4 tsp. salt
Dash freshly ground pepper
2 tbsp. oil
1/3 c. corn flake crumbs

Preheat oven to 500 degrees. Wash and dry fillets and cut into serving pieces. Season, dip in oil, and coat with corn flake crumbs. Arrange in a single layer in a lightly oiled shallow baking dish. Bake 10 minutes without turning or basting. Yields: 4 serving. Approximately cal/serv.: 260

This method produces a crisp coating; looks almost like deep-fried fish.
