CRISPY BAKED FILLETS 
1 lb. fish fillets
1/4 tsp. salt
Dash freshly ground pepper
2 tbsp. oil
1/3 c. corn flake crumbs

Preheat oven to 500 degrees. Wash and dry fillets and cut into serving pieces; season, dip in oil and coat with corn flake crumbs. Arrange in a single layer in a lightly oiled shallow baking dish. Bake 10 minutes, without turning or basting. This method produces a crisp coating; looks almost like deep fried fish. Serves 4.
