CRISPY FILLET OF FLOUNDER LIGHT
(DINNER FOR TWO)
 
4 slices fillet of flounder (may be substituted with other fish)
1/2 c. skim milk
2 c. corn flakes
4 tbsp. butter

Preheat oven at 450 degrees. Rinse the fish with cold water. Use a glass baking pan or Corningware dish. Add the 1/2 cup skim milk so that the fish will not stick to the pan and will keep the fish nice and moist.

Melt the 4 tablespoons of butter and pour over top of the fish. Crush the 2 cups of corn flakes with your hands as you sprinkle over the top of the fish. Place in preheated oven for 15 to 20 minutes, then serve.

I tried this recipe and it was wonderful. I only added lemon juice with the milk and lemon pepper seasoning to the fish.

Pretty good basic light and crispy recipe. The fish remained nice and moist and the crispy top makes you feel like you're cheating. Throw some herbs, lemon and cheese on it and you've got a delicious recipe!

I love this! I was never a fish eater. I hated it but I'm now on a diet and I'm trying new things. I added black pepper, garlic powder, dried minced onions, and sea salt. WOW was it good!
