9 to 10 tart apples, peeled, cored and sliced 1 c. apple juice or apple cider 1 1/2 c. sugar 1/2 tsp. ground allspice 1 tsp. cinnamon 1/4 tsp. ground cloves 1/8 tsp. salt Combine apple slices and juice or cider in a heavy kettle. Cover. Cook over moderate heat until apples are mushy, about 15 minutes. Strain. Return to kettle, add sugar, spices and salt. Mix well. Cook and stir over moderate heat about 30 to 40 minutes until mixture is thick. Seal in hot jars. |
