CRANBERRY SCONES | |
2/3 cup buttermilk 1 large egg 3 cups flour 4 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 8 tbsp. cold unsalted butter 1 cup fresh or frozen cranberries 1/2 cup sugar milk or cream for brushing over top Preheat oven to 375°F. Spray a pizza pan with non-stick spray. Beat egg with buttermilk and set aside. In a large bowl, stir together flour, baking powder, baking soda, and salt. Add butter, cutting with a pastry blender, or rubbing with your fingers, until mixture resembles coarse crumbs. Stir in buttermilk mixture with a fork until a soft dough forms. Stir in cranberries and sugar. Turn out dough onto a lightly floured surface and knead 5 times. Form a circle 2 inches thick and slice into 8 wedges. Place on pan and brush with milk or cream. Bake 20 to 25 minutes or until golden brown. Let cool 20 minutes in pan. Remove from pan and cool completely on a wire rack. |
