SCOTCH SCONES WITH PEACHES | |
2 cups sifted all-purpose flour 3 tsp. baking powder 1 tsp. salt 1 tbsp. sugar 4 tbsp. shortening 2 eggs 1/2 cup milk 2 tbsp. sugar Sift flour, baking powder, salt and sugar together. Cut in shortening. Beat 1 egg and 1 egg yolk and add to milk. Stir into dry ingredients to make a soft dough. Turn out on lightly floured surface and knead gently for 30 seconds. Roll out in circular shape to 1/2-inch thickness. Cut into pie-shaped pieces. Brush tops with white of an egg and sprinkle with 2 tablespoons sugar. Bake in moderately hot oven (425°F.) for 12 to 15 minutes. Split and fill with fresh or canned sliced peaches. Top with whipped cream. Makes 8 scones. |
