PUMPKIN NUT BREAD 
3 1/2 c. flour
2 tsp. baking soda
1 tsp. each cinnamon and salt
1/2 tsp. each baking powder and allspice
2 2/3 c. sugar
1 c. salad oil or applesauce
4 eggs
1/3 c. water
16 oz. can pumpkin
1/2 c. chopped nuts

Preheat oven to 350 degrees. Grease two 9 x 5 inch loaf pans. Combine flour, baking soda, cinnamon, salt, baking powder and allspice; set aside. In large bowl, mix sugar and oil (or applesauce). Add eggs, water and pumpkin; beat well. Gradually add dry ingredients and stir just until blended. Stir in nuts.

Pour batter into pans. Bake for 55-60 minutes, until toothpick inserted in center comes out clean. Remove from oven to rack; cool 10 minutes before removing loaves from pans. Let cool completely on wire rack.
