COBAN SALAD (TURKISH) 
3 tbsp. fresh lemon juice
1 sm. clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. cooking oil
1/4 c. minced parsley
1 sm. onion, finely chopped
1 lg. green pepper, seeded and chopped
1 lg. tomato, seeded and chopped
1 lg. cucumber, peeled, seeded and chopped

Stir together lemon juice, garlic, salt and pepper until salt dissolves. Stir in oil, parsley and onion. Add remaining ingredients and toss gently to combine. Garnish with tomato wedges, cover and chill well. Also good with green pepper or hot green pepper as garnish.

Definitely Olive oil. Never "cooking oil". Garlic and "pepper" is optional. Lemon juice can be replaced by cider (grape) or better yet "sour grape" juice.
