SWEET POTATO NUT PIE 
Pastry for one 9 inch pie
1/2 c. chopped pecans
3 eggs (slightly beaten)
1 c. brown sugar (packed)
1 c. milk
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt
1/2 c. lemon juice
2 tbsp. melted butter
1 1/2 c. mashed sweet potatoes
1 1/2 c. whipped cream

Line pan with pastry then press 1/4 cup pecans into pastry. Combine eggs, brown sugar, milk, cinnamon, nutmeg, ginger and salt in bowl. Mix well then add lemon juice and butter.
