FRIED CATFISH 
Whole or filet catfish
Crisco shortening
Louisiana fish fry
Tony Chachere's creole seasoning

Wash fish well, pat dry, dot completely dry. Sprinkle with creole seasoning. Then roll in fish fry. In an iron skillet, drop fish into hot grease. Cook over high to medium heat until fish floats to top.

Turn only once. Takes about 6 minutes to fry one batch. Don't over crowd fish in skillet. Drain on paper towels; add more seasoning if you like spicy food! Dice up potatoes and drop in after fish are cooked.
