SALMON CROQUETTES 
1 (14 1/2 oz.) can salmon
1 lg. onion, coarsely cut or grated
2 eggs, beaten lightly
36 crushed saltine crackers
1/2 tsp. black pepper
1/2 tsp. table salt
16 oz. can drained tuna, if desired

In a large bowl, add eggs and slightly beat, open can of salmon, pour liquid in with eggs, add crushed crackers, mix well with spoon, add coarsely chopped onions, salt, pepper. Add salmon and drained crushed tuna, do not use liquid from tuna. Make small patties by hand or spoon. Roll each in cornmeal. Have 1/3 cup oil hot in fry pan. Brown slowly on all sides. Drain on paper towel.

Also you may bake in greased loaf pan in 450 degree oven for 45 minutes to 1 hour. Serve with catsup or whatever sauce you like.
