FILLED OATMEAL COOKIES | |
2 1/2 c. flour 1 tsp. salt 1 c. soft shortening 2 1/2 c. Quaker Oats (quick or old fashioned uncooked) 1 tsp. baking soda 1 c. brown sugar 1/2 c. water 1/2 c. jelly or jam Sift together flour, soda and salt into a bowl. Add sugar, shortening and water. Beat until smooth, about 2 minutes. Fold in oats. Sprinkle counter with confectioners' sugar. Roll dough thin, cut with a circular cookie cutter. Place plain cookie on lightly greased cookie sheet. Top with 1/2 teaspoon jelly and cover with another cookie with a hole cut out of the center. Press edges together lightly. Bake in moderate oven at 350 degrees for 10 to 12 minutes. Makes approximately 2 dozen cookies. Delicious! |
