UNBAKED OATMEAL COOKIES 
1/2 c. butter
2 c. sugar
1 1/2 c. milk
3 tbsp. cocoa (heaping)
1 tbsp. instant coffee
1/4 tsp. salt
3 c. quick rolled oats
1 c. chopped nuts
1 tsp. vanilla

Melt shortening. Add sugar, milk, cocoa and instant coffee. Boil 1 minute. Remove from heat and immediately add oats, nuts and vanilla. Mix well. Drop by teaspoon onto wax paper. When cool, roll in confectioners' sugar if desired. Yields about 70 small cookies.
