HAPPY DAY CAKE 
1 (3 3/4 oz.) pkg. chocolate fudge pudding pie filling
2 c. milk
1 (11 1/2 oz.) frozen pound cake
1/3 c. coconut
Ice cream (optional)

Prepare pudding with 2 cups milk according to package directions in medium size bowl. Cover and refrigerate until cool.

Slice pound cake lengthwise into 3 layers. Spread pudding between each layer and frost top with pudding.

Sprinkle with coconut.

Serve with a scoop of ice cream, if desired.

Serves 8-10.
