BAKED STUFFED HAM 
1 c. mashed, cooked sweet potatoes
3 c. bread cubes, toasted
1/3 c. finely chopped celery
1/4 c. finely chopped onion
1/2 lb. loose sausage
3/4 tsp. poultry seasonings
2 tbsp. butter, melted
2 center cut fully cooked ham slices, 1/2 inch thick

Combine sweet potatoes, bread cubes, celery, and onion. Brown sausage and add to the mixture. Blend in seasonings and butter. Slash fat edge around ham to keep from curling. Place 1 ham slice in greased baking dish; spread with stuffing. Top with remaining ham slice. Cover and bake at 325 degrees for 30 minutes. Remove, cover, and bake an additional 30 minutes. Serves 6.
