EBBA'S MEAT LOAF | |
3 lbs. hamburger 2 c. crushed saltine crackers 1 lg. onion, chopped 2 med. bell peppers 2 eggs 1 1/2 tsp. salt 1 1/2 tsp. black pepper 1 lg. can tomatoes, drained (save the juice) 2 dashes garlic salt 4 tbsp. brown sugar 5 tbsp. ketchup 1/2 tsp. salt 1 tbsp. butter 1/2 tsp. dry mustard 1/4 tsp. black pepper 1 tbsp. Worcestershire sauce 1/2 c. water Add hamburger, crackers, onion, pepper, eggs, 1 1/2 teaspoons salt, pepper, tomatoes (without juice), and garlic salt together and mix well. Dump into baking pan and form into a loaf. In a separate pan, take leftover juice from tomatoes and add brown sugar, ketchup, salt, butter, dry mustard, black pepper, Worcestershire sauce, and water. Bring to a boil. (I usually 1 1/2 times this recipe. Put a little of this on top of the meat loaf and bake, covered, at 350 degrees for about 45 minutes. Next, take out of oven and pour off excess grease and put remaining sauce on meat loaf and cook, uncovered, an additional 45 minutes.) Note: Please do not make this dish unless you have plenty of mashed potatoes and English peas to put alongside it. |
