THANKSGIVING YAM SURPRISE 
4 yams, boiled, halved and skinless
2 tbsp. butter
1/4 c. brown sugar
1 1/2 tbsp. cornstarch
1/8 tsp. cinnamon
1 tbsp. lemon juice
1 (6 oz.) pkg. dried apricots, boiled until tender
1 c. reserved apricot juice from above
1/4 c. chopped walnuts
Salt and pepper to taste

Place yams in a greased baking dish. Sprinkle yams with lemon juice and season with salt and pepper to taste. Add cinnamon, brown sugar, cornstarch, butter and apricots to 1 cup reserved apricot juice. Bring to a boil. Simmer until it thickens a bit. Pour mixture over yams and top with walnuts. Bake at 350 degrees for 30 minutes.
