EASY GAUCAMOLE 
2 ripe ripe Hass avocados
2 tsp. freshly squeezed lime juice
2 tbsp. fresh cilantro, finely chopped
1/4 cup red onion, finely chopped
1/2 jalapeņo, including seeds, finely chopped
1/4 tsp. sea salt (or to taste)

Slice the avocado in half and the remove the pit. Scoop the avocados out of the shell. A grapefruit spoon or sharp edged stamped spoon works well. In a medium bowl, toss the avocado with the fresh lime juice. Add the salt and mash until smooth. Add the remaining ingredients and mix well.

If you prefer, this can all be made in a blender, food processor, Vitamix or Ninja. Using a potato masher or large fork makes for an easier clean-up. Sometimes we add lemon juice/peel and garlic (to taste) when preparing in a blender. The garlic can optionally be roasted by wrapping in foil and baking for 15 minutes after spraying with olive oil.

Taste and adjust seasonings adding salt, lemon, garlic powder or onion powder to taste ingredients and mix well.Taste the guacamole (over and over) and adjust seasoning if necessary.
