CHICKEN MONTEREY 
4 boneless chicken breasts, halved and skinned
6 oz. Monterey Jack cheese, cut into 8 slices
1 (4 oz.) can diced green chilies, drained
2 c. Cheddar cheese crackers, crushed
1 pkg. taco seasoning mix

Place chicken breasts between 2 sheets of waxed paper and pound with rolling pin to flatten. Place 1 slice of cheese and 1 tablespoon of chilies on each breast. Wrap breasts around filling and secure with wooden toothpicks. In a dish, combine crackers and taco seasoning; blend well. Dip each chicken bundle in crumbs, pressing to coat well. Place bundles in a greased 9 x 9 x 2 inch baking dish. Bake in a 350 degree oven 30 to 40 minutes or until chicken is tender.

Serves 4 to 6.
