1 1/2 c. graham cracker crumbs (about 24 squares) 1/3 c. finely chopped pecans 1/3 c. sugar 1/3 c. butter, melted 2 (8 oz.) pkg. cream cheese, softened 1 (14 oz.) can sweetened condensed milk 2 eggs 1/2 c. lemon juice In a bowl, combine cracker crumbs, pecans and sugar. Add butter. Mix well. Set aside 1/2 cup of mixture. Press remaining mixture into a greased 13 x 9 x 2-inch baking dish. Bake at 325°F for 8 minutes. Meanwhile, in a small bowl, beat the cream cheese until smooth. Add milk, eggs and lemon juice. Beat until smooth. Spoon over crust. Sprinkle with reserved crumb mixture. Bake for 30 minutes or until center is set. Cool on a wire rack. Store in refrigerator. |
