STEWED TOMATOES WITH DUMPLINGS 
1 (14 1/2 oz.) can diced tomatoes (undrained)
1 tbsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
1/2 c. biscuit/baking mix
3 tbsp. milk

In a saucepan, combine the tomatoes, sugar, salt, pepper and butter. Bring to a boil over medium heat, stirring occasionally.

In a bowl, combine the biscuit mix and milk. Drop batter in 4 mounds over the tomatoes. Reduce heat. Cover and simmer for 10 minutes or until toothpick inserted in a dumpling comes out clean (do not lift cover while simmering).

Makes 2 servings.
