TENDER CORNED BEEF 
Corned beef, any brand, and size, seasoned or unseasoned

Place corned beef in a baking dish with sides at least 2 inches. Cover tightly with foil. Bake at 250 degrees for 1 hour per pound. Drain and slice.

I will never boil corned beef again! This is a wonderful way to cook corned beef. I had a 5.64 lb brisket and cooked it in a pure convection oven for less than 5 hours. It is so tender and JUICY I can't believe it. I will tell you why it says to bake it in a dish with side at least 2 inches tall. The brisket produces so much juice, it will overflow if it is any more shallow than that. I am speaking from experience! Thanks for sharing this recipe.
